DIY Blue Corn Pancakes

In the spirit of DIY gift-giving, I am sharing a recipe for pancakes-in-a-jar. Now, for all of you that say you read my column and that you want to make my recipes, make one of these for yourself and another for a friend and you will have no more excuses!

DIY Blue Corn Pancakes

Step 1: Assembly
  • Wash and dry one glass jar with lid (spaghetti or salsa jars work great). Roll one sheet paper into mouth of jar to make funnel. Pour without mixing: 3/4 C flour, 1/4 C yellow corn meal, 1/4 C blue corn meal, 2 t baking powder, 1/2 t salt, and 2 T sugar.
Step 2: Label
  • Write on a sticky gift tag: Blue Corn Pancakes. Add 2 T veg. oil, 1 1/4 C milk, 1/3 C water, 1 t vanilla. Stick tag on side of jar.
Step 3: Decorate
  • Some ideas: tie a ribbon around the jar lid, cut a square of fabric and put between lid and mouth of jar, stick bow or juniper branch to top of lid, or glue circle of wrapping paper on lid.
The result is something resembling one of those colored sand sculptures that you may have made as a child at a craft fair.
